This steak is rare! Not necessarily cooked rare (unless that's your choice) but there are only two per animal and are often a "Butcher's Steak". Flank Steaks are lean and tender, they are great for BBQ or the broiler. Marinate them, cook on the BBQ or Grill, slice, and serve! Cut across the muscle grain for best results.
