Flat Iron Steaks are cut from the chuck; they are a lean, tender, flat, thin steak.  Hence the name "Flat Iron"!  These steaks can easily be pan-fried or they are delicious when marinated and grilled or roasted.

we rotate pastures so we can sell beef all year. every two weeks we sort out finished cattle for harvest.
