The BEST beef around for California (Santa Maria Style) BBQ. Tri-Tip is a staple in the West for grilling but almost unknown east of the Rockies. There are only 2 Tri Tips per animal which makes it a premium piece of beef. Use a dry rub marinade and cook it slow (preferably over some oak logs or wood chips) to get that real California Coastal BBQ flavor. Slice it thin across the grain then halfway through pivot 90 degrees to catch the other grain direction. You have to know what you are doing with Tri-Tip. When you master Tri-Tip you master BBQ.
